Easy Pumpkin Oat Energy Balls (2 cooking appliances)
These vegan pumpkin oatmeal bites will be your go to snack to make for yourself when you are rushing out the door or for an afterschool snack for your children. This recipe is nut free, can be gluten free, vegan and yes they are addictive. There is no need for an oven. Only need two kitchen appliances. In less than 30 minutes you will have a yummy snack for the week. Are you trying to clean out your pantry? This recipe can be custom to what you have in your pantry. Feel free to add in your personal ingredients. The best part of this recipe is that you can add or take out what you want and still taste amazing.
This recipe tastes like dessert in your mouth. It melts perfectly with every bite. It is a healthier version of a no bake oatmeal cookie. No need for flour or eggs. 100% vegan.
I personally made them in a classroom with 12 of my 4 year old students. If they can make them, so can you! If you have children this will be a fun way to get them involve in the kitchen. Hardly any mess.

There is no wrong way to do it. Do not have an ingredient? That is okay substitute to something that you do have. It requires little of your time and can make up to 24 servings. You do not have to wait for the oven the preheat or for them to cool off to eat.

Now let’s talk about what you need to make these addictive pumpkin oatmeal bites this holiday season.
Ingredients
Pumpkin Puree: In order to not have a smooth consistency and pumpkin flavor you will need pumpkin puree. You can go that extra mile and make it from scratch, but I personally use the canned pumpkin puree.
Rolled oats: rolled oats works best for a non sticky consistency. You can also use instant oatmeal, but keep in mind that you may need to add more to the batch since it is a smaller oat.
You can also use gluten free rolled oats.
Maple syrup: This recipe does not have any sugar, however the maple syrup is what makes it sweet. If you do not want to add this ingredient to make it less sugary for your kiddos. That will also work.
Sun butter: Sun butter is an alternative for those who are allergic to nuts. My students do not taste the difference.
If you do not have any allergies you can also use, peanut butter, almond butter, or any other nut butter.
For extra protein you can also do PB powder.
Chia seeds: Chia seeds add a little bit more protein and is great for digestion.
Vanilla extract: This will also give it a sweet taste. I would recommend if you are skipping the maple syrup do not skip this ingredient.
Dried Cranberries: Great for digestion and makes the recipe sweet and yummy.
Pumpkin spice: This will give the recipe a pumpkin kick.
I am not a pumpkin spice girly so if you are not a fan of pumpkin I would skip this ingredient.
Optional ingredients:
These are additional ingredients that can make this recipe even more addictive. It is all optional.
- Vegan chocolate chips
- coconut flakes
- raisins
- crushed nuts
I personally like them with chocolate chips for more texture and flavor.
How to make Pumpkin Oatmeal bites
In a bowl add in your wet/sticky ingredients. Sun butter, maple syrup, pumpkin puree and vanilla extract. Mix until it is all mixed together.
Once all mixed add in your pumpkin spice, chia seeds, rolled oats, dried cranberries, and any other additional ingredients. If your Mixter is too sticky for your liking add in more oatmeal.
Once all ingredients are mixed in a bowl. Add your bowl with your mixture in the freezer for 20 minutes. This will stiffen your mixture for a less sticky consistency.
After, 20 minutes you can scoop it out with an icecream scoop or with your hands. Roll them up into a smooth ball. It is up to you how big you want them.
Then, they are ready to eat!
It is best stored in the fridge for a week or the freezer for 2 months.

Ingredients
- 2 cups Rolled Oats
- 1/2 cup Maple syrup
- 1/2 cup Pumpkin Pure
- 1 cup Sun butter or any nut butter you prefer.
- 1/3 cup Dried Cranberries
- 1 tsp Vanilla extract
- 1/4 cup Chia Seeds
- 1 tbs Pumpkin spice
Instructions
- Into your bowl mix in your wet ingredients. Add in your sun butter or your choice of nut butter, the maple syrup, vanilla extract, and the pumpkin purée.
- Once all wet ingredients are mixed. add in the rolled oats, chia seeds, pumpkin spice and cranberries.
- When all ingredients are mixed together. Let the bowl sit in the freezer for 15 to 20 minutes. In order to stiffen the mixture.
- Finally, you may roll your mixture into 24 energy balls. Store in fridge or freezer to make them last longer.
